Ingredients
1 to 1 1/2 pounds fresh NC red snapper (or any flaky white fish or salmon)
2 to 3 tablespoons light olive oil
1 bunch asparagus
kosher salt/pepper
2 cloves garlic, sliced
1/2 orange, slices and juice
1/2 lemon, slices and juice
4 to 5 sprigs fresh thyme
10 to 12 cherry tomatoes, halved

Want a super delicious and healthy meal in less than thirty minutes? My Baked Fish in Parchment Paper is it! My favorite part of making this dish is releasing the steam from the packet and smelling all of that goodness. I used NC Red Snapper for this recipe, but you can use any flaky white fish, or even salmon. As far as the vegetables, use my idea, or create your very own combination. Be sure to put this recipe on repeat.

HOW TO PREPARE BAKED FISH IN PARCHMENT PAPER
Heat oven to 400 degrees. Rub about a tablespoon of olive oil on the top of the fish. Season with kosher salt and black pepper. Tear off a large piece of parchment paper. Place the asparagus spears (be sure to cut off the woody ends) on the parchment. Dot with olive oil and season with kosher salt and black pepper. Place fish, skin side down, on top of asparagus.
Squeeze the juice of one-half lemon and one-half orange on top of the fish. Add the garlic slices. Layer the sliced lemons and oranges. Top with the fresh thyme and cherry tomatoes (you can halve them). Drizzle on just a touch more olive oil, kosher salt and black pepper.
This next step is very, very important. The key to get a good steam is to wrap the fish in the paper very tightly. Make sure there are no openings. Even the tiniest opening will allow the steam to release while baking. Typically, I like to bring the top together first, then wrap the side edges. Place the packets on a baking pan. This filet was about a pound and a half. So, it took about twenty-two minutes to finish. Decrease the baking time for a smaller filet. If you are unsure about whether or not the fish is fully-cooked, go ahead and peek. Just a little peek! Be sure to wrap back up immediately if you need to steam longer.
TO FINISH AND SERVE THE BAKED FISH IN PARCHMENT PAPER
