banana flower recipes | banana blossom recipes | how to clean banana flower with step by step photo and video recipe. indian cuisine is known for its use of almost all tropical fruits grown and available natively. as a matter of fact, we even end up making some of the yummy recipes, which are otherwise termed as waste or not edible. one such traditional healthy recipe using banana blossom is banana flower chutney, banana flower chips and banana flower sukka or poriyal.
i have been doing a lot of polls, voting and surveys in my facebook videos, to see what do my readers like. for instance, do they like, milk-based recipes? do they like instant recipes? or do they like traditional recipes. i was really overwhelmed with the result. one of the promising results was in favour of traditional recipes. hence as promised i am posting one of the traditional and earthly recipes using banana blossom. basically, in the beginning, i have shown how to clean the banana flower which is essential for any banana blossom recipe. once it is cleaned, i have shown how to make bale hoo chutney or poombe chutney, banana heart sukka or poriyal and banana florets fry or chips.
before i begin with the recipe, some essential and critical tips and suggestions for an ideal banana blossom recipes. firstly, you may have to peel the 1-2 layers of bract or leaves and discard it. it may be damaged or ripe and hence may not be edible. we have to use the inner peel or bract for chutney. secondly, the banana florets once processed should be stored in buttermilk. it helps to hold the colour of the florets and also helps to stop the nectar from oozing out. lastly, in this recipe, i have shown only 3 types of recipes from banana blossom. but there are myriad healthy recipes out of banana flower. you may prepare vazhaipoo vada, banana flower dry sabzi, and even valaipoo sambar.

Ingredients
- 1 banana flower / banana blossom
for boiling bract (petals)
- water
- ½ tsp turmeric
- 1 tsp salt
for chutney:
- 3 tsp oil
- 2 tbsp chana dal
- 2 tbsp urad dal
- 3 dried red chilli
- 1 cup coconut, grated
- small ball sized tamarind
- 2 tsp jaggery
- 1 tsp salt
for seasoning florets:
- ¼ cup curd
- 3 cup water
for chips:
- ½ cup maida / plain flour
- ½ cup corn flour
- ½ tsp turmeric
- 1 tsp kashmiri red chilli powder
- ½ tsp garam masala
- ¼ tsp pepper powder
- ½ tsp chaat masala
- 1 tsp ginger paste
- ½ tsp salt
- ¾ cup water
- oil, for frying
for boiling banana heart:
- water
- ½ tsp turmeric
- 1 tsp salt
for stir fry:
- 2 tbsp oil
- 1 tsp mustard
- 1 tsp chana dal
- 1 tsp urad dal
- few curry leaves
- 1 onion, finely chopped
- 2 chilli, slit
- 2 clove garlic, crushed
- 1 inch ginger, finely chopped
- ½ tsp salt
- 2 tbsp coconut, grated
- 2 tbsp coriander, finely chopped
- 2 tbsp lemon juice
Instructions
firstly, peel the petals and collect the florets.
now clean the florets and set aside florets, petals(chop) and heart(chop).
chutney preparation:
firstly, in a large vessel takewater, ½ tsp turmeric and 1 tsp salt.
add in chopped bract (petals) and boil for 5 minutes.
drain off and keep aside.
in a pan heat 3 tsp oil and add 2 tbsp chana dal, 2 tbsp urad dal, 3 dried red chilli.
roast on low flame until it turns aromatic.
cool completely, and transfer to the blender.
add in cooked bract along with1 cup coconut, small ball sized tamarind, 2 tsp jaggery and 1 tsp salt.
blend to smooth paste adding water as required.
add the tempering and banana flower chutney is ready to enjoy with hot steamed rice.
chips preparation:
firstly, in a large bowl take¼ cup curd and 3 cup water.
whisk and mix well.
soak in cleaned florets for 10 minutes.
drain off and keep aside.
in a large bowl take½ cup maida, ½ cup corn flour.
also add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp garam masala, ¼ tsp pepper powder, ½ tsp chaat masala, 1 tsp ginger paste and ½ tsp salt
add ¾ cup water and prepare a thick batter.
now add in florets and coat uniformly.
deep fry in hot oil keeping the flame on medium.
once the chips turn golden brown and crisp drain off over kitchen paper.
finally, enjoy banana flower chips immediately.
sukka or stir fry preparation:
firstly, in a large vessel takewater, ½ tsp turmeric and 1 tsp salt.
add in chopped banana flower heart and boil for 10 minutes.
drain off and keep aside.
in a large kadai heat2 tbsp oil and splutter 1 tsp mustard, 1 tsp chana dal, 1 tsp urad dal, few curry leaves.
add1 onion, 2 chilli, 2 clove garlic, 1 inch ginger and saute well.
further add in boiled banana flower heart,½ tsp salt and mix well.
cover and simmer for 10 minutes or until everything is well cooked.
now add2 tbsp coconut,2 tbsp coriander and 2 tbsp lemon juice. mix well.
finally, enjoy banana flower sukka or stir fry with hot steamed rice.

- finally, banana blossom recipe tastes great when prepared slightly spicy.
